Have you ever had homemade granola? This was my first time making my own granola and I absolutely loved the result. This recipe is a perfect breakfast alternative. It is lightly sweetened and pairs perfectly with greek yogurt. Quick, easy and healthy!

Granola and yogurt was the staple breakfast when we traveled abroad to Sweden. The trip reminded me how much I enjoy eating granola. Even better, I learned that my husband enjoyed this as a choice for breakfast! I have previously tried to make cereal and milk a hit in our house, but it never stuck. Granola and yogurt would be a nice change from bacon and eggs.
After returning home I immediately put granola on our grocery list. Of course I was jet lagged/ sleep deprived and forgot to purchase it. Instead of returning to the store I looked in my pantry to see if I could make it from home. Months ago, I purchased a 25 pound bag of quick oats. Baby T used to be obsessed with oatmeal and wanted it for breakfast most days. Her obsession slowed way down, leaving me with a massive bag of oats. Homemaking granola would be the perfect way to use up the large amount of oats. I don’t know why I hadn’t thought of it sooner!

Our Homemade Granola

Start by mixing all of the dry ingredients in a large bowl. Oats, nuts, seeds, cinnamon and salt.

Next add the wet ingredients. Oil, honey, maple syrup and vanilla. After it is combined, pour onto a large, greased baking sheet with raised sides. Press the mixture onto the baking sheet.

Bake for 10 minutes. Remove from the oven and stir. Repress the mixture onto the baking sheet. Cook for another 10-15 minutes, until the mixture is golden brown. Remove from the oven and let cool.

Once it is fully cooled sprinkle with shredded coconut and raisins. Remove from the baking sheet and store in an airtight container.

- 4 cups quick oats certified gluten-free
- 2 cups mixed nuts coarsely chopped
- 1/3 cup seeds hemp, chia, sunflower
- 1 tbsp cinnamon
- 1 tsp salt
- 1/2 cup olive oil
- 1/2 cup honey
- 1/4 cup maple syrup
- 2 tbsp vanilla
- 1/2 cup shredded coconut
- 1/2 cup dried fruit

Preheat oven to 350 degrees Fahrenheit and grease a large, raised baking sheet. (or line the baking sheet with parchment paper)

In a large mixing bowl, combine the oats, nuts, seeds, salt and cinnamon. Stir to blend.

Pour in wet ingredients, oil, honey, maple syrup and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and spread it in an even layer. Press the granola into the pan.

Bake until lightly golden, about 20 to 25 minutes, stirring halfway. The granola will further crisp up as it cools.

Let the granola cool completely (about 30 minutes). Top with the shredded coconut and dried fruit (if using). Break the granola into pieces with your hands if you want it chunky, or stir it with a spoon to have less chunks.

Store the granola in an airtight container.
