Total Time 1 hour

  • 4 cups quick oats certified gluten-free
  • 2 cups mixed nuts coarsely chopped
  • 1/3 cup seeds hemp, chia, sunflower
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 1/2 cup olive oil
  • 1/2 cup honey
  • 1/4 cup maple syrup
  • 2 tbsp vanilla

Optional add-ins

  • 1/2 cup shredded coconut
  • 1/2 cup dried fruit

  1. Preheat oven to 350 degrees Fahrenheit and grease a large, raised baking sheet. (or line the baking sheet with parchment paper)

  2. In a large mixing bowl, combine the oats, nuts, seeds, salt and cinnamon. Stir to blend.

  3. Pour in wet ingredients, oil, honey, maple syrup and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and spread it in an even layer. Press the granola into the pan.

  4. Bake until lightly golden, about 20 to 25 minutes, stirring halfway. The granola will further crisp up as it cools.

  5. Let the granola cool completely (about 30 minutes). Top with the shredded coconut and dried fruit (if using). Break the granola into pieces with your hands if you want it chunky, or stir it with a spoon to have less chunks.

  6. Store the granola in an airtight container.
